- Season chicken with thyme, salt, and pepper. Sear in olive oil over medium-high heat until golden and cooked through, 5 to 6 minutes per side. Remove to a plate.
- Reduce heat to medium, melt butter, and sauté mushrooms and onion with a pinch of salt until browned, about 5 to 6 minutes. Add garlic and cook 30 seconds.
- Pour in chicken broth, scraping up browned bits, then stir in cream and Dijon. Simmer gently until sauce thickens, 3 to 4 minutes.
- Return chicken to the skillet, spoon sauce over the top, and warm through 1 to 2 minutes. Finish with parsley and serve.
Notes
Pat the chicken very dry before seasoning to get that deep sear. If the sauce thickens too much while resting, stir in a splash of warm broth to loosen it back up. The mustard is just background, so the sauce will not taste mustardy.
