One-Pan Creamy Chicken Parmesan Pasta Recipe

Ingredients
  

  • 1 lb boneless skinless chicken breast, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • ½ cup heavy cream
  • 2 cups low-sodium chicken broth
  • 8 oz penne pasta
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup freshly grated Parmesan cheese
  • ½ cup shredded low-moisture mozzarella
  • Fresh basil or parsley, for serving

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then brown on all sides, about 5 to 6 minutes total. Transfer to a plate.
  2. Reduce heat to medium and cook onion until soft, about 3 minutes. Add garlic and cook 30 seconds. Stir in crushed tomatoes, cream, broth, Italian seasoning, salt, and pepper. Bring to a gentle bubble.
  3. Add penne and return chicken to the skillet. Cover and simmer over medium-low heat for 12 to 15 minutes, stirring occasionally, until pasta is tender.
  4. Remove from heat and stir in Parmesan and half the mozzarella. Top with remaining mozzarella, cover, and let sit off heat for 2 minutes until melted.
  5. Garnish with fresh basil and serve hot.

Notes

Freshly grated Parmesan melts into a silky sauce, while pre-shredded cheese can stay stringy.
