One-Pan Cheesy Hamburger Zucchini Skillet Recipe

Ingredients
  

  • 1 lb ground beef
  • 2 medium zucchini, diced into ½-inch pieces
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp Italian seasoning
  • 1 cup shredded sharp cheddar cheese
  • Salt and black pepper

Method
 

  1. Brown the beef in a large skillet over medium-high heat, about 6 minutes. Drain most of the fat.
  2. Reduce heat to medium, sauté onion 3 minutes, add garlic and zucchini with salt and pepper, cook 5 minutes.
  3. Stir in tomato paste and Italian seasoning, add diced tomatoes and beef, simmer 8-10 minutes.
  4. Top with cheddar, cover, and let the cheese melt for 2 minutes. Serve hot.

Notes

For the smoothest cheese pull, grate your own cheddar. No oven or broiler is needed, a simple lid melts the cheese on the stovetop. The zucchini releases water as it cooks, so the sauce may loosen a little if reheated.
