One-Pan Cheesy Ground Turkey Casserole Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb (450g) ground turkey
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup chicken broth
  • 2 cups uncooked elbow macaroni
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • Fresh basil for garnish

Method
 

  1. Heat oil in a large oven-safe skillet over medium-high heat. Brown ground turkey for about 6 minutes, then add onion and cook 4 minutes. Stir in garlic and cook 30 seconds.
  2. Add tomato sauce, diced tomatoes with juices, broth, oregano, salt, and pepper. Simmer 5 minutes. Stir in pasta, cover, and cook on medium-low 8 to 10 minutes until tender with a little sauce remaining.
  3. Preheat oven to 375°F (190°C). Remove skillet from heat, top with mozzarella and Parmesan, then bake uncovered 20 minutes until bubbly.
  4. Switch to broil, cook 2 to 3 minutes until golden and spotty. Rest 5 minutes, garnish with basil, and serve.

Notes

If your skillet handle is not oven-safe, transfer everything to a greased 9×13 baking dish before topping with cheese. The pasta will soak up more liquid as it rests, so that 5 minutes off the heat makes a big difference in the final texture.
