One-Pan BBQ Pineapple Chicken Recipe

Ingredients
  

  • 6-8 boneless skinless chicken thighs (about 2 lbs)
  • 1 tbsp vegetable oil
  • Salt and black pepper
  • 1/2 cup BBQ sauce
  • 1/4 cup pineapple juice
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Pinch of cayenne pepper (optional)
  • 4-6 pineapple rings (canned or fresh)
  • Sliced green onions or cilantro for serving (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Season chicken with salt and pepper. Heat oil in an oven-safe skillet over medium-high. Sear chicken 3-4 minutes per side until golden.
  2. In a small bowl, whisk together BBQ sauce, pineapple juice, brown sugar, garlic powder, smoked paprika, and cayenne.
  3. Pour sauce over chicken, turning to coat. Nestle pineapple rings around chicken. Bake 15-20 minutes until chicken reaches 165°F (74°C).
  4. Switch oven to broil. Broil 2-3 minutes, watching closely, until sauce is sticky and pineapple has charred spots.
  5. Let rest 5 minutes. Slice chicken and serve with pan sauce and pineapple, garnished with green onions or cilantro if using.

Notes

This dish is best with boneless skinless thighs, but bone-in pieces work with longer bake times as noted in the table above. For a smoky depth, try a chipotle BBQ sauce. If the sauce isn’t sticky enough after baking, the broiler step will always fix it.
