One-Pan Baked Hot Honey Feta Chicken Recipe

Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 8 oz block feta cheese
  • ¼ cup hot honey
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Pat chicken dry, season with salt, pepper, garlic, and red pepper flakes, and place in a 9x13‑inch baking dish. Nestle the feta block in the center, drizzle with olive oil and half the hot honey.
  2. Bake 25 to 30 minutes, until chicken reaches 165°F (74°C) and feta is soft and golden at the edges.
  3. Spoon the melted feta and pan juices over the chicken, drizzle with remaining hot honey, and serve immediately.

Notes

Cold chicken straight from the fridge goes great over greens for lunch. If your feta does not brown on top as much as you like, run the dish under the broiler for 1 minute before spooning the sauce, but watch it carefully so the honey does not burn.
