Ingredients

  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup full-fat cottage cheese
  • 1/4 cup vanilla protein powder
  • 1 cup oat flour
  • 1 ripe banana, mashed
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch of salt

Method

  1. Preheat oven to 350°F and line a 12-cup muffin tin with liners. Whisk oat flour, protein powder, baking powder, cinnamon, and salt in a large bowl.
  2. Create a well in the center. Mash the banana in the well, add eggs and cottage cheese, and stir until smooth and combined.
  3. Fold in the grated zucchini and any add-ins until no dry streaks remain. The batter will be thick but scoopable.
  4. Divide batter among muffin cups, filling three-quarters full. Bake 20 to 22 minutes until tops spring back. Cool in tin 5 minutes, then transfer to a wire rack.

Notes

The zucchini must be squeezed dry or the muffins will turn out heavy. If your protein powder is unsweetened, stir a tablespoon of maple syrup or honey into the wet ingredients. These muffins keep well in the fridge for grab-and-go mornings all week.
