One-Bowl Whole Wheat Banana Bread Recipe

Ingredients
  

  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/2 cup packed light brown sugar
  • 1/3 cup neutral oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed very ripe bananas (about 3 medium)
  • 1/4 cup plain whole milk yogurt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a large bowl, mash bananas, then whisk in oil, brown sugar, eggs, vanilla, and yogurt until combined.
  2. Sprinkle flour, baking soda, and salt over the wet ingredients. Fold gently with a spatula just until no dry flour remains; do not overmix. Fold in any add-ins now.
  3. Scrape batter into prepared pan and smooth the top. Bake 50 to 60 minutes, until a toothpick inserted in the center comes out with moist crumbs. If browning too quickly, tent with foil after 30 minutes.
  4. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Slice and serve.

Notes

This loaf tastes even better the next day after the flavors meld. For a bakery-style top, sprinkle a little turbinado sugar over the batter before it goes in the oven.
