- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a large bowl, mash bananas, then whisk in oil, brown sugar, eggs, vanilla, and yogurt until combined.
- Sprinkle flour, baking soda, and salt over the wet ingredients. Fold gently with a spatula just until no dry flour remains; do not overmix. Fold in any add-ins now.
- Scrape batter into prepared pan and smooth the top. Bake 50 to 60 minutes, until a toothpick inserted in the center comes out with moist crumbs. If browning too quickly, tent with foil after 30 minutes.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Slice and serve.
Notes
This loaf tastes even better the next day after the flavors meld. For a bakery-style top, sprinkle a little turbinado sugar over the batter before it goes in the oven.
