Ingredients

  • 1 ½ cups (190g) all-purpose flour
  • ¾ cup (65g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, cubed
  • 2 oz (55g) dark chocolate, chopped
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) buttermilk, room temperature
  • ¾ cup (130g) semisweet chocolate chips
  • 3 oz (85g) dark chocolate, chopped (for glaze)
  • ⅓ cup (80ml) heavy cream (for glaze)

Method

  1. Microwave the butter and 2 oz dark chocolate in a large bowl in 20-second bursts until smooth, about 1–2 minutes. Let cool slightly.
  2. Whisk the sugar, eggs, vanilla, and buttermilk into the melted chocolate mixture until smooth.
  3. Sift the flour, cocoa powder, baking powder, baking soda, and salt into the bowl and whisk just until no dry streaks remain.
  4. Fold in the chocolate chips with a spatula.
  5. Preheat oven to 350°F (175°C). Pour batter into a greased and parchment-lined 9-inch round pan. Bake 30–35 minutes until a toothpick comes out with moist crumbs. Cool completely, then heat the cream to a simmer and pour over the 3 oz chopped chocolate; whisk smooth and pour over the cake before serving.

Notes

The cake tastes even better the next day when the chocolate has had time to develop. Make sure it’s fully cool before glazing, or the glaze will slide right off.
