- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners. In a large bowl, whisk the flour, pumpkin pie spice, baking powder, baking soda, and salt.
- Make a well in the center and add the eggs, pumpkin puree, oil, both sugars, evaporated milk, and vanilla. Stir just until combined, about 20 to 30 seconds.
- Divide the batter evenly among the muffin cups, filling each nearly to the top. Bake for 18 to 20 minutes, until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm.
Notes
If you want extra-tall muffin tops, let the batter sit in the bowl for 15 minutes before scooping. This gives the flour time to hydrate and helps the muffins rise higher in the oven.
