Ingredients
  

  • 3 large overripe bananas, mashed
  • 1/2 cup unsalted creamy peanut butter
  • 2 large eggs
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon fine salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan. In a large bowl, mash the bananas, then whisk in peanut butter, brown sugar, eggs, and vanilla until smooth.
  2. Sprinkle flour, baking soda, and salt over the wet mixture. Fold gently with a spatula until no dry streaks remain, about 30 seconds. Do not overmix.
  3. Pour the batter into the prepared pan, smooth the top, and tap the pan on the counter a few times.
  4. Bake for 50-55 minutes until deeply golden and a toothpick inserted in the center comes out with a few moist crumbs. Cool in the pan for 10 minutes, then turn out onto a rack and slice.

Notes

This bread actually tastes even better the next day, once the peanut butter flavor settles into the crumb. If you are baking in a humid kitchen, you may need the full 55 minutes to hit a clean toothpick. For the cleanest slices, let the loaf cool completely before cutting, though warm crumbly slices are hard to resist.
