One-Bowl High Protein Pumpkin Bread Recipe

Ingredients
  

  • 2 cups rolled oats, blended into flour
  • 1 cup vanilla protein powder
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup pumpkin purée
  • 2 large eggs
  • 1/3 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1/4 cup milk of choice

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan. Blend oats to a fine flour, then whisk with protein powder, pumpkin pie spice, baking powder, baking soda, and salt.
  2. Add pumpkin purée, eggs, maple syrup, melted coconut oil, and milk. Whisk just until no dry streaks remain.
  3. Pour batter into the pan and bake 50 to 55 minutes, until a toothpick comes out clean. Cool in the pan 10 minutes, then transfer to a rack.
  4. Cool completely on the rack before slicing.

Notes

Cool completely before slicing for the cleanest cuts; the loaf continues to set as it cools. Store leftovers tightly wrapped at room temperature for 2 days or refrigerate up to 5 days.
