One-Bowl Coconut Flour Banana Bread Recipe

Ingredients
  

  • 3 medium ripe bananas
  • 4 large eggs, at room temperature
  • 1/4 cup (60 ml) melted coconut oil or unsalted butter, cooled slightly
  • 1 tsp vanilla extract
  • 1/2 cup (60 g) coconut flour
  • 1 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/4 cup (60 ml) maple syrup or honey, optional

Method
 

  1. Preheat the oven to 350°F (175°C). In a large bowl, mash the bananas, then whisk in the eggs, melted coconut oil, vanilla, and optional maple syrup until smooth.
  2. Add the coconut flour, baking soda, and salt to the bowl and stir with a spatula just until no dry streaks remain. Let the batter sit for 1 minute.
  3. Scrape the batter into a greased 8×4-inch loaf pan. Bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean.
  4. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely before slicing.

Notes

If your bananas are on the smaller side, use 4 instead of 3. The loaf slices cleanest when fully cooled, but if you cannot wait, a serrated knife warm from hot water helps cut tidy pieces.
