Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 4 tsp instant coffee granules
  • 2 tsp baking powder
  • ½ tsp fine sea salt
  • 1 large egg
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup powdered sugar
  • 1 tsp instant coffee granules
  • 2 to 3 tbsp milk or water

Method
 

  1. Heat oven to 350°F (175°C) and grease an 8×8-inch square pan. In a large bowl, whisk the flour, sugar, cocoa, instant coffee, baking powder, and salt until combined.
  2. Make a well in the center, add the egg, milk, oil, and vanilla, and stir just until no dry flour remains.
  3. Fold the batter a few times with a rubber spatula to catch any pockets, then scrape it into the prepared pan and smooth the top.
  4. Bake for 40 to 45 minutes, until a toothpick inserted in the center comes out with moist crumbs. Cool in the pan 10 minutes, then transfer to a rack to cool completely.
  5. Whisk the powdered sugar, instant coffee, and 2 tbsp milk until smooth, adding the remaining 1 tbsp milk if needed for a pourable consistency. Drizzle over the fully cooled cake and let set 15 minutes before slicing.

Notes

The coffee flavor intensifies as the cake rests, so it is even better the next day. If you want a thicker glaze, stir in an extra 2 to 3 tablespoons of powdered sugar.
