One-Bowl Chewy Brownies Recipe

Ingredients
  

  • 8 tbsp unsalted butter (1 stick)
  • 1 cup granulated sugar
  • ¼ cup packed light brown sugar
  • ½ cup unsweetened Dutch-process cocoa powder
  • 2 large eggs plus 1 egg yolk
  • 1 tsp vanilla extract
  • ¾ cup all-purpose flour
  • ½ tsp fine sea salt
  • 1 cup semisweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch metal baking pan with parchment paper.
  2. Melt butter in a medium saucepan over medium-low heat. Off heat, whisk in granulated sugar, brown sugar, and cocoa powder until glossy, about 1 minute.
  3. Whisk in eggs one at a time, then the yolk and vanilla, until thick and shiny.
  4. Fold in flour and salt with a spatula until a few streaks remain, then add chocolate chips and fold until just combined.
  5. Spread into the pan. Bake 22 to 26 minutes, until a toothpick comes out with moist crumbs.
  6. Cool completely in the pan, then lift out and slice into 16 squares.

Notes

Wait until the brownies are fully cool before cutting. If you slice them warm, they’ll fall apart. For the neatest edges, use a plastic knife to cut through the parchment liner without snagging.
