Ingredients
  

  • 1 ½ cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp fine sea salt
  • ⅔ cup neutral oil
  • ½ cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups grated carrots
  • 1 cup chopped walnuts
  • 4 oz cream cheese
  • 4 tbsp unsalted butter
  • 1 cup powdered sugar
  • ½ tsp vanilla (for frosting)

Method
 

  1. Preheat oven to 350°F. Toast walnuts on a baking sheet for 5-7 minutes until fragrant. Let cool.
  2. In a large bowl, whisk oil, both sugars, eggs, and vanilla. Stir in grated carrots.
  3. Add flour, baking soda, cinnamon, nutmeg, and salt. Stir gently until just combined. Fold in toasted walnuts.
  4. Pour batter into a greased 9-inch square pan. Bake 28-32 minutes until a toothpick has moist crumbs. Cool completely.
  5. Beat cream cheese and butter until smooth. Stir in powdered sugar and vanilla. Spread over cooled cake. Slice and serve.

Notes

The cake stays moist for days. Once frosted, keep it chilled. Let slices sit at room temp for a bit before serving if you prefer a softer bite.
