One-Bowl Banana Bread Recipe

Ingredients
  

  • 3 very ripe medium bananas, mashed
  • 1/3 cup (75 g) unsalted butter, melted and cooled slightly
  • 3/4 cup (150 g) packed light brown sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour, spooned and leveled
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 tsp ground cinnamon (optional)

Method
 

  1. Mash the bananas in a large bowl until mostly smooth with a few lumps.
  2. Whisk in the melted butter, brown sugar, egg, and vanilla until glossy.
  3. Sprinkle the flour, baking soda, salt, and cinnamon over the top, then fold with a spatula just until no dry streaks remain.
  4. Pour the batter into a greased, parchment-lined 8 1/2 x 4 1/2-inch loaf pan and bake at 350°F (175°C) for 50 to 60 minutes, until a toothpick comes out with moist crumbs.
  5. Cool in the pan for 10 minutes, lift out, and cool on a rack before slicing.

Notes

If your bananas are extra large, use two instead of three or add an extra tablespoon of flour to balance the moisture. This loaf tastes even better the next day after the flavors settle.
