Old-Fashioned Vanilla Wafer Cake Recipe

Ingredients
  

  • 11 oz box vanilla wafers, crushed into fine crumbs
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup whole milk
  • 2 tsp baking powder
  • 1/4 tsp fine salt
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans, toasted

Method
 

  1. Preheat oven to 350°F. Butter and flour a 10-cup bundt pan. Crush the vanilla wafers into fine crumbs, then whisk with baking powder, salt, and coconut.
  2. Beat butter and sugar until fluffy, add eggs one at a time, then vanilla. Alternate adding the crumb mixture and milk, stirring just until combined.
  3. Fold in the toasted pecans gently, no more than 10 strokes.
  4. Pour batter into the pan, bake 50 to 55 minutes until a toothpick comes out with a few moist crumbs. Cool 10 minutes, invert, cool completely, and dust with powdered sugar.

Notes

Room temperature butter and eggs blend more smoothly, but if you forget, the cake will still turn out well. Toast the pecans for the best depth of flavor, and let the cake cool in the pan for exactly 10 minutes so it releases easily.
