Method
- Stir the peanut butter, sugar, and egg together in a bowl until a smooth dough forms.
- Roll tablespoon-sized balls of dough, place them on an ungreased baking sheet, and press with a sugar-dipped fork to make a crosshatch.
- Bake at 350°F (175°C) for 10 to 12 minutes, cool on the sheet for 5 minutes, then move to a wire rack to finish cooling.
Notes
A half teaspoon of vanilla extract stirred in with the wet ingredients adds a warm background note, and a pinch of flaky sea salt right when they come out of the oven makes the peanut flavor pop even more. The cookies will seem soft when you pull them from the oven, but they crisp up as they cool on the sheet.
