Ingredients

  • 8 cups cubed day-old bread
  • 4 large eggs
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)
  • 1 tablespoon unsalted butter

Method

  1. Cube the bread into 1-inch pieces. If fresh, toast in a 300°F oven for 10 minutes until dry but not browned.
  2. Whisk eggs, milk, sugar, vanilla, cinnamon, and salt until frothy and dissolved, about 1 minute.
  3. Butter an 8-inch square baking dish. Spread bread in dish, scatter raisins, and pour custard over. Press down and let soak 15 minutes.
  4. Preheat oven to 350°F (180°C). Bake for 45-55 minutes until puffed, golden, and a knife inserted in the center comes out clean.
  5. Cool 10 minutes, then dust with cinnamon or powdered sugar and serve warm.

Notes

Let the pudding rest for 10 minutes after baking before serving; the custard will continue to set and be easier to scoop.
