Oats Chilla Recipe

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup water, plus more as needed
  • 1/4 cup finely chopped red onion
  • 1 small tomato, seeded and finely diced
  • 1 green chili, minced
  • 2 tbsp chopped fresh cilantro
  • 1/2 tsp cumin powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp Kashmiri red chili powder or mild paprika
  • 1/2 tsp salt
  • 1 to 2 tsp neutral oil for cooking

Method
 

  1. Stir the oats, cumin, turmeric, chili powder, and salt together in a bowl.
  2. Whisk in the water until smooth. Let the batter rest 5 minutes, then loosen with a little more water if needed.
  3. Fold in the onion, tomato, chili, and cilantro until evenly mixed.
  4. Heat a nonstick tawa over medium heat, brush lightly with oil, and pour a scant 1/2 cup batter. Spread into a 5 to 6 inch circle and cook 3 minutes per side until golden and crisp.
  5. Fold or roll each chilla and serve hot with chutney or yogurt.

Notes

If the batter thickens while you cook, stir in a teaspoon of water at a time to keep it spreadable. Leftover uncooked batter can sit in the fridge for up to 4 hours, but the vegetables will soften, so it is best used right away.
