Ingredients
  

  • 1 cup (2 sticks) unsalted butter
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 2 cups old-fashioned rolled oats
  • 1 cup white chocolate chips
  • 3/4 cup dried cranberries

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Brown half the butter in a saucepan until nutty and golden, about 4–5 minutes; pour into a large bowl to cool.
  2. Add the remaining butter and both sugars to the browned butter. Cream on medium speed until light and fluffy, about 2 minutes. Beat in the egg and vanilla until smooth.
  3. Whisk together the flour, baking soda, and salt. Mix into the butter mixture on low in two batches, just until combined. Fold in the oats, white chocolate chips, and dried cranberries with a spatula.
  4. Scoop dough onto the sheets, spacing 2 inches apart. Bake one sheet at a time on the center rack for 10–12 minutes, until edges are golden and centers look slightly underdone.
  5. Let cookies rest on the sheet for 5 minutes, then transfer to a wire rack. Serve warm or let cool completely.

Notes

These cookies stay chewy for days. For an even nuttier flavor, toast the oats in a dry pan for a few minutes before mixing. If you only have salted butter, reduce the salt to 1/4 teaspoon. Let the baking sheets cool completely between batches so the dough doesn’t start melting before it hits the oven.
