Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp fine sea salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Method
 

  1. Cream butter and both sugars with an electric mixer on medium speed until light and fluffy, about 3 minutes.
  2. Add egg and vanilla and beat on low until combined, about 30 seconds.
  3. In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Gradually mix into the butter mixture on low speed.
  4. Fold in oats and raisins with a spatula until evenly distributed.
  5. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined baking sheets, spacing 2 inches apart. Bake one sheet at a time for 10 to 12 minutes, until edges are golden and centers look slightly underdone.
  6. Let cookies rest on the hot sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For the chewiest texture, pull the cookies when the centers are just set and shiny. If you prefer a crisper cookie, bake 1 to 2 minutes longer. The dough can be refrigerated, covered, for up to 3 days before baking; let it sit at room temperature for 20 minutes to soften slightly before scooping.
