Oatmeal Raisin Chocolate Chip Cookies Recipe

Ingredients
  

  • 1 cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • 3 cups old-fashioned rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup raisins

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment. Beat butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
  2. Add egg and vanilla, beat just until combined, about 30 seconds.
  3. Whisk flour, baking soda, and salt together. Stir into butter mixture along with oats until no dry streaks remain.
  4. Fold in chocolate chips and raisins until evenly distributed.
  5. Scoop 2-tablespoon mounds onto sheets, spacing 2 inches apart. Bake 10 to 12 minutes until edges are golden and centers look slightly underdone. Cool on sheet 5 minutes, then transfer to a wire rack.

Notes

Chill the dough for 20 minutes if the kitchen is warm or the butter was too soft; this stops spreading. For plumper raisins, soak them in hot water for 10 minutes and drain well before folding in.
