Method
- Cream butter and sugar, then add egg, vanilla, and molasses. Stir in the whisked dry ingredients, chill dough for 10 to 15 minutes. Preheat oven to 350°F (175°C).
- Whisk melted butter, brown sugar, maple syrup, egg, and salt until glossy, then fold in chopped pecans.
- Press about 2 tbsp of chilled dough into each greased cup of a 12-cup muffin pan, forming a well on the bottom and up the sides.
- Spoon 1 to 1½ tbsp of the pecan filling into each dough cup. Top with a pecan half if desired.
- Bake for 18 to 22 minutes until edges are golden and filling is set on the perimeter.
- Let cool in the pan for 10 minutes, then run a knife around the edges, lift out, and cool completely on a wire rack. Serve warm or at room temperature.
Notes
The 10-minute rest in the pan after baking is not optional, the sugar filling is dangerously hot and will tear the cookie if you try to lift it too soon. The total time includes 10 minutes of cooling in the pan, but the cookies will continue to firm up as they cool on the rack.
