Method
- Heat oven to 350°F (175°C) and line a baking sheet with parchment. Soak 1/2 cup dates in hot water 10 minutes, then drain, pat dry, and chop.
- Beat 1/2 cup butter and 1/2 cup sugar until fluffy, about 2 minutes. Beat in egg and vanilla.
- Whisk flour, baking soda, cinnamon, and salt. Stir into butter mixture, then fold in oats and dates.
- Scoop 1.5 tbsp mounds of dough onto the sheet, flatten slightly, and bake 10-12 minutes until edges are golden.
- Cool on the sheet 5 minutes, then transfer to a wire rack.
Notes
You can refrigerate the unbaked dough for up to 24 hours before baking. Scooped dough freezes well, too, for up to 2 months. Bake from frozen, adding 2 to 3 minutes to the time.
