Oatmeal Date Cookies Recipe

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup pitted dates, finely chopped (soaked and drained)

Method
 

  1. Heat oven to 350°F (175°C) and line a baking sheet with parchment. Soak 1/2 cup dates in hot water 10 minutes, then drain, pat dry, and chop.
  2. Beat 1/2 cup butter and 1/2 cup sugar until fluffy, about 2 minutes. Beat in egg and vanilla.
  3. Whisk flour, baking soda, cinnamon, and salt. Stir into butter mixture, then fold in oats and dates.
  4. Scoop 1.5 tbsp mounds of dough onto the sheet, flatten slightly, and bake 10-12 minutes until edges are golden.
  5. Cool on the sheet 5 minutes, then transfer to a wire rack.

Notes

You can refrigerate the unbaked dough for up to 24 hours before baking. Scooped dough freezes well, too, for up to 2 months. Bake from frozen, adding 2 to 3 minutes to the time.
