Oatmeal Cookie Bars Recipe

Ingredients
  

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups semisweet chocolate chips

Method
 

  1. Heat oven to 350°F (175°C). Line an 8x8-inch metal baking pan with parchment, leaving overhang.
  2. Stir the melted butter with both sugars in a large bowl until no streaks remain.
  3. Add eggs and vanilla, stirring vigorously until the batter is smooth and glossy.
  4. Fold in flour, baking soda, and salt until just combined, then fold in oats and chocolate chips.
  5. Press dough into the pan in an even layer. Bake 25 to 28 minutes until edges are golden and the center is set.
  6. Cool in the pan 20 minutes, then lift out, slice into 16 squares, and serve.

Notes

If you want a glossy top, press a few extra chocolate chips onto the surface as soon as the bars come out of the oven. They will melt into a shiny layer. These bars freeze beautifully, so they are great for making ahead.
