- Heat oven to 350°F (175°C). Line an 8x8-inch metal baking pan with parchment, leaving overhang.
- Stir the melted butter with both sugars in a large bowl until no streaks remain.
- Add eggs and vanilla, stirring vigorously until the batter is smooth and glossy.
- Fold in flour, baking soda, and salt until just combined, then fold in oats and chocolate chips.
- Press dough into the pan in an even layer. Bake 25 to 28 minutes until edges are golden and the center is set.
- Cool in the pan 20 minutes, then lift out, slice into 16 squares, and serve.
Notes
If you want a glossy top, press a few extra chocolate chips onto the surface as soon as the bars come out of the oven. They will melt into a shiny layer. These bars freeze beautifully, so they are great for making ahead.
