Oatmeal Cinnamon Cookies Recipe

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk flour, oats, cinnamon, baking soda, and salt until combined.
  3. In a large bowl, beat butter, brown sugar, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2 to 3 minutes. Beat in egg and vanilla until blended.
  4. Add the dry ingredients to the wet mixture and mix on low speed just until no flour streaks remain. Do not overmix.
  5. Drop the dough by rounded tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10 to 12 minutes, until the edges are golden and the centers still look slightly underdone. Let the cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes before scooping if you want thicker, chewier cookies. For even baking, bake one sheet at a time on the middle rack.
