- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk flour, oats, cinnamon, baking soda, and salt until combined.
- In a large bowl, beat butter, brown sugar, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2 to 3 minutes. Beat in egg and vanilla until blended.
- Add the dry ingredients to the wet mixture and mix on low speed just until no flour streaks remain. Do not overmix.
- Drop the dough by rounded tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, until the edges are golden and the centers still look slightly underdone. Let the cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes before scooping if you want thicker, chewier cookies. For even baking, bake one sheet at a time on the middle rack.
