Oatmeal Chocolate Chip Cookies Recipe

Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 2 cups semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment.
  2. Cream butter, brown sugar, and granulated sugar until pale and fluffy, about 3 minutes.
  3. Beat in eggs one at a time, then vanilla, about 30 seconds.
  4. Whisk flour, baking soda, and salt in a separate bowl. Mix into wet ingredients on low, then fold in oats and chocolate chips.
  5. Drop 2-tablespoon sized dough balls onto sheets, spacing 2 inches apart. Bake 10 to 12 minutes until edges are golden and centers look soft.
  6. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

Let the cookies cool on the baking sheet before moving them; they are very soft straight out of the oven and will firm up as they cool. For an even thicker cookie, chill the scooped dough for 30 minutes before baking.
