Method
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment.
- Cream butter, brown sugar, and granulated sugar until pale and fluffy, about 3 minutes.
- Beat in eggs one at a time, then vanilla, about 30 seconds.
- Whisk flour, baking soda, and salt in a separate bowl. Mix into wet ingredients on low, then fold in oats and chocolate chips.
- Drop 2-tablespoon sized dough balls onto sheets, spacing 2 inches apart. Bake 10 to 12 minutes until edges are golden and centers look soft.
- Cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
Let the cookies cool on the baking sheet before moving them; they are very soft straight out of the oven and will firm up as they cool. For an even thicker cookie, chill the scooped dough for 30 minutes before baking.
