Ingredients
  

  • 1 cup (90 g) rolled oats
  • 3/4 cup (95 g) all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 1/4 cup (55 g) unsalted butter, melted and slightly cooled
  • 1/2 cup (100 g) packed light brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, at room temperature
  • 1/3 cup (80 ml) unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 cup (80 g) raisins or chopped walnuts (optional)

Method
 

  1. Whisk oats, flour, baking soda, cinnamon, and salt in a medium bowl.
  2. Whisk melted butter, brown sugar, and granulated sugar in a large bowl for 1 minute, then add egg, applesauce, and vanilla; whisk until combined.
  3. Stir dry ingredients into wet mixture until just combined, then fold in raisins or walnuts if using.
  4. Drop rounded tablespoons of dough onto parchment-lined baking sheets, 2 inches apart. Bake at 350°F (180°C) for 10 to 12 minutes, until edges are set.
  5. Cool on the baking sheet for 2 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

The dough can be made ahead and refrigerated for up to 2 days. Let it sit at room temperature for 10 minutes before scooping.
