Nut-Free Granola Bars Recipe

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1/2 cup raw sunflower seeds
  • 1/2 cup raw pumpkin seeds
  • 1/4 cup flaxseed meal
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsalted butter or refined coconut oil
  • 1/4 cup packed light brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1/2 cup dried cranberries or raisins
  • 1/4 cup mini chocolate chips

Method
 

  1. Toast oats, sunflower seeds, and pumpkin seeds in a dry skillet over medium heat for about 3 minutes, until golden and fragrant.
  2. Combine honey, butter, brown sugar, vanilla, and salt in a saucepan; heat until bubbling and simmer 1 minute.
  3. Pour honey mixture over dry ingredients and mix-ins; press very firmly into a lined 8x8-inch pan.
  4. Chill at least 2 hours, then slice into 12 bars.

Notes

The hands-on time is only 10 minutes, but you do need to chill the bars for at least 2 hours before slicing. Keep them refrigerated; they’ll stay firm and chewy for weeks.
