Ingredients

  • 2 cups (250 g) all-purpose flour, plus extra for dusting
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 2 tablespoons granulated sugar
  • ⅓ cup (75 g) cold unsalted butter, cubed
  • ¾ cup (180 ml) cold whole milk
  • ¼ cup (55 g) unsalted butter, melted
  • ½ cup (100 g) packed brown sugar
  • 1 tablespoon ground cinnamon
  • ½ cup (60 g) powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Method

  1. Preheat oven to 400°F. Whisk flour, baking powder, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs with pea-sized pieces.
  2. Stir in milk just until a shaggy dough forms, then gently knead 4-5 times on a floured surface into a smooth ball.
  3. Roll dough into a 10x14-inch rectangle. Brush with melted butter, leaving a ½-inch border on one long side. Mix brown sugar and cinnamon; sprinkle over butter and press gently. Roll up tightly starting from the long side without the border, pinch seam to seal.
  4. Slice into 8 pieces, place cut-side up in a greased 9-inch round pan. Bake 20-22 minutes until golden and bubbly; cool 5 minutes.
  5. Whisk powdered sugar, 1 tablespoon milk, and vanilla until smooth; drizzle over warm rolls and serve.

Notes

The dough can be made ahead and refrigerated overnight; let sit at room temp for 10 minutes before slicing. For a tangier dough, replace milk with buttermilk and reduce baking powder to 1 ½ teaspoons plus ¼ teaspoon baking soda.
