No-Mixer Orange Bento Cake Recipe

Ingredients
  

  • ⅔ cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ tsp baking powder
  • ⅛ tsp fine salt
  • Zest of 1 medium orange
  • 1 large egg
  • 3 tbsp neutral oil
  • 2 tbsp fresh orange juice
  • 2 tbsp plain whole-milk yogurt

Method
 

  1. Heat oven to 350°F (175°C). Grease a 4 inch pan, line the base, and dust with sugar if desired.
  2. Whisk flour, sugar, baking powder, and salt. Rub orange zest into the sugar until fragrant.
  3. In a separate bowl, whisk egg, oil, orange juice, and yogurt until smooth.
  4. Fold wet mixture into dry, pour into the pan, and smooth the top.
  5. Bake 18 to 22 minutes until springy and a toothpick comes out with moist crumbs.
  6. Cool 10 minutes in the pan, remove, cool completely, dust with powdered sugar, and slice.

Notes

If the middle domes too quickly, gently press it down with a flat spatula right after it comes out of the oven. This keeps the top level for stacking or decorating later. For a deeper orange colour, add a tiny drop of natural orange food colouring to the wet mixture.
