Method
- Whisk warm water, apple cider, sugar, yeast, and salt. Add olive oil and flour, stir until no dry spots remain. Cover and let rise for 1½ hours.
- With wet hands, fold the dough over itself 4 times. Cover, rest 30 minutes, then repeat the folds once more.
- Pour 2 tbsp olive oil into a 9x13-inch metal pan. Transfer dough, gently stretch to fill, and let rest 30 minutes. Preheat oven to 425°F (220°C).
- Dimple the dough with wet fingers. Arrange thin apple slices on top, press lightly, brush with melted butter, and sprinkle with brown sugar and cinnamon. Rest 15 minutes.
- Bake 25 to 30 minutes until deep golden. Cool 10 minutes in the pan, then slice and serve warm.
Notes
If you use a glass or ceramic pan, add 2 to 3 minutes to the bake time. The focaccia is at its absolute best the day it’s made, still warm from the oven, but leftovers reheat beautifully in a hot oven.
