No-Cook Salmon Salad Sandwich Recipe

Ingredients
  

  • 1 can (14.75 oz) salmon, drained
  • 1/3 cup mayonnaise
  • 1 celery stalk, finely diced
  • 2 tbsp red onion, finely diced
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • 1/2 tsp Dijon mustard
  • Salt and black pepper, to taste
  • 8 slices bread
  • Lettuce leaves and sliced tomato (optional)

Method
 

  1. Drain the salmon and use a fork to break it into small flakes in a bowl.
  2. Add the mayonnaise, celery, red onion, lemon juice, dill, and Dijon mustard. Stir until well combined, then season with salt and pepper.
  3. Spread the salmon salad over 4 slices of bread, add lettuce and tomato if using, top with the remaining bread, slice in half, and serve.

Notes

Assemble the sandwiches just before serving so the bread stays crisp. If you need to make the salad ahead, just store the filling in the fridge and build the sandwiches when you are ready.
