No-Churn Mint Chocolate Chip Ice Cream Recipe

Ingredients
  

  • 1 can (14 oz) sweetened condensed milk
  • 2 cups heavy whipping cream
  • 1 tsp pure peppermint extract
  • 1 cup mini dark chocolate chips

Method
 

  1. Beat the heavy whipping cream with an electric mixer on high speed until stiff peaks form, about 3 to 4 minutes.
  2. In a separate bowl, stir the sweetened condensed milk, peppermint extract, and a pinch of salt until smooth.
  3. Fold the condensed milk mixture into the whipped cream until no streaks remain, then gently fold in the mini dark chocolate chips.
  4. Transfer to a freezer-safe container, press wax paper directly onto the surface, cover, and freeze for at least 6 hours.
  5. Let sit at room temperature for 5 minutes before scooping. Serve right away.

Notes

This ice cream needs at least 6 hours to set completely. For a green tint, add 2 to 3 drops of gel food coloring when mixing the condensed milk base. Once frozen, it stays scoopable for about 2 weeks.
