No-Churn Blueberry Ice Cream Recipe

Ingredients
  

  • 2 cups heavy whipping cream, cold
  • 1 (14 oz) can sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Method
 

  1. Cook the blueberries, sugar, and lemon juice in a saucepan over medium heat for 8 minutes until jammy and thickened. Cool completely.
  2. Whip the cold heavy cream to stiff peaks using an electric mixer.
  3. Whisk the sweetened condensed milk and vanilla, then fold in the whipped cream gently.
  4. Layer the cream base and cooled compote in a loaf pan, swirling a few times with a knife.
  5. Press plastic wrap onto the surface, cover, and freeze at least 6 hours.
  6. Let sit at room temperature 5 to 10 minutes, then scoop and serve.

Notes

The ice cream needs a full 6 hours to firm up, and overnight is even better. If it has been frozen longer than a day, let it rest closer to 10 minutes at room temperature before scooping for the creamiest texture.
