- Stir crumbs, 1/4 cup sugar, and melted butter together. Press firmly into a 9-inch pie plate or springform pan. Chill while you prepare the filling.
- Beat cream cheese and 1/2 cup sugar until smooth. Add vanilla and lemon juice, then beat just until combined.
- In a chilled bowl, whip the cold evaporated milk on high speed until stiff peaks form, about 3 to 4 minutes.
- Fold the whipped milk into the cream cheese mixture gently in two additions until no streaks remain. Pour into the chilled crust and smooth the top. Cover and refrigerate at least 4 hours, preferably overnight.
- Run a knife around the edge, slice, and serve cold.
Notes
The cheesecake needs at least 4 hours to set in the fridge, but overnight gives the firmest texture and cleanest slices. If you want a taller cheesecake, use an 8-inch springform pan and build the crust a little higher.
