Method
- Blend 6 oz strawberries, granulated sugar, and lemon juice into a smooth soak. Pour into a shallow dish.
- Whip mascarpone, heavy cream, powdered sugar, and vanilla until thick and fluffy.
- Quickly dip ladyfingers in the soak and arrange a single layer in an 8-inch springform pan. Spread half the cream over them and scatter half of the remaining diced strawberries on top.
- Repeat with another layer of dipped ladyfingers and the rest of the cream. Cover and refrigerate at least 4 hours.
- Unmold the cake, top with fresh strawberry slices, dust with powdered sugar, and slice.
Notes
The cake needs at least 4 hours in the fridge to set, but leaving it overnight gives the cleanest slices and the best texture. Keep the leftover soak in the dish while you work so you can touch up any dry spots on the ladyfingers as you go.
