- Crumble the cake, then mix with cream cheese, preserves, powdered sugar, and vanilla until a soft dough forms.
- Scoop tablespoon-sized balls, roll until smooth, and chill in the freezer for 20 minutes until firm.
- Melt white chocolate chips with coconut oil in 20-second microwave bursts, stirring until smooth.
- Dip a stick tip in chocolate, insert into a cake ball, then dip the whole pop and tap off excess.
- Sprinkle crushed freeze-dried strawberries on the wet coating and let set for 10 minutes before serving.
Notes
Prep time is hands-on only; chilling time is extra. These cake pops can be made a day ahead and stored in the fridge. For the smoothest coating, use white candy melts instead of chocolate chips.
