No-Bake Strawberry Oreo Icebox Cake Recipe

Ingredients
  

  • 24 regular Oreo cookies
  • 6 tbsp unsalted butter, melted
  • 8 oz full-fat cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream, cold
  • 1 cup finely chopped fresh strawberries
  • 2 tbsp strawberry jam or preserves
  • Extra whole Oreos and sliced strawberries for topping (optional)

Method
 

  1. Crush the Oreos, mix with melted butter, and press firmly into the bottom and slightly up the sides of a 9-inch springform pan.
  2. Beat cream cheese, sugar, and vanilla until smooth. In a separate bowl, whip heavy cream to stiff peaks, then fold into the cream cheese with chopped strawberries and jam.
  3. Spread the filling over the crust, decorate the top if desired, cover, and refrigerate for at least 4 hours or overnight.
  4. Run a knife around the edge, remove the springform ring, slice, and serve cold.

Notes

Chilling time is not reflected in the total. For the neatest slices, chill overnight and use a hot, dry knife. The cake can be made up to 2 days in advance and kept covered in the fridge.
