No-Bake Banana Pudding Cheesecake Recipe

Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 8 oz cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 tsp vanilla extract
  • 2 to 3 ripe bananas, sliced
  • 1 ½ cups vanilla wafers, crushed
  • 1 cup heavy cream, cold
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

Method
 

  1. Mix graham cracker crumbs, melted butter, and sugar; press firmly into a 9-inch springform pan. Refrigerate.
  2. Beat cream cheese until smooth. Add sweetened condensed milk, pudding mix, and vanilla; beat 2 minutes until thick.
  3. Arrange banana slices over the crust and sprinkle with half of the crushed vanilla wafers.
  4. Spoon the filling over the layers, spread evenly, cover, and refrigerate at least 4 hours until firm.
  5. Whip heavy cream, powdered sugar, and vanilla to stiff peaks. Spread over the chilled cheesecake.
  6. Run a knife around the pan, remove the ring, slice with a hot knife, and serve.

Notes

Chill the cheesecake overnight for the cleanest slices and the best flavor. The bananas will soften slightly and the wafers will absorb a little moisture, turning soft and cake-like.
