Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 ½ cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 2 cups semisweet chocolate chips
  • 4 ounces milk chocolate bar, grated
  • 1 ½ cups chopped pecans or walnuts

Method
 

  1. Preheat oven to 375°F (190°C). Blend oats in a blender until powdery, then whisk with flour, baking powder, baking soda, and salt.
  2. Cream butter and both sugars on medium speed until light and fluffy, about 2 to 3 minutes.
  3. Beat in eggs one at a time, then add vanilla.
  4. On low speed, mix in the dry ingredients until just combined.
  5. Fold in chocolate chips, grated chocolate, and nuts with a spatula.
  6. Drop rounded tablespoonfuls onto lined baking sheets. Bake 8 to 10 minutes until edges are golden. Cool on sheet for 5 minutes, then transfer to a wire rack.

Notes

A 30-minute chill on the dough helps if your kitchen is warm. For smaller cookies, watch the time, they bake fast. The grated chocolate bar is part of the cookie's old-school character, but you can swap in extra chips if you want.
