- Preheat oven to 375°F (190°C). Blend oats in a blender until powdery, then whisk with flour, baking powder, baking soda, and salt.
- Cream butter and both sugars on medium speed until light and fluffy, about 2 to 3 minutes.
- Beat in eggs one at a time, then add vanilla.
- On low speed, mix in the dry ingredients until just combined.
- Fold in chocolate chips, grated chocolate, and nuts with a spatula.
- Drop rounded tablespoonfuls onto lined baking sheets. Bake 8 to 10 minutes until edges are golden. Cool on sheet for 5 minutes, then transfer to a wire rack.
Notes
A 30-minute chill on the dough helps if your kitchen is warm. For smaller cookies, watch the time, they bake fast. The grated chocolate bar is part of the cookie's old-school character, but you can swap in extra chips if you want.
