- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine peanut butter, sugar, egg, and vanilla and salt if using. Stir until smooth and glossy.
- Roll the dough into 1-inch balls and place them on the sheet. Press each with a fork dipped in sugar to make a crosshatch pattern.
- Bake for 10-12 minutes, until edges are golden and tops are set.
- Let the cookies cool on the sheet for 5 minutes, then move to a wire rack to cool completely.
Notes
If your natural peanut butter is especially oily, stir it well and drain off a teaspoon of excess oil if needed. The cookies firm up as they cool, so don't wait for them to feel hard in the oven.
