Nacho Cheese Dip Recipe

Ingredients
  

  • 8 oz American cheese, cubed
  • 5 oz evaporated milk
  • 2 tbsp pickled jalapeños, chopped
  • 1 tbsp brine from jalapeño jar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp ground cumin
  • Pinch cayenne pepper

Method
 

  1. Combine cheese, evaporated milk, garlic powder, onion powder, cumin, and cayenne in a small saucepan over medium-low heat. Stir constantly for about 4 minutes until melted and smooth.
  2. Remove from heat, stir in chopped jalapeños and brine until the dip loosens to a dippable consistency, about 1 minute.
  3. Spoon into a warm serving bowl, top with extra jalapeño slices and a pinch of cayenne. Serve immediately with tortilla chips.

Notes

This dip is best eaten right away while hot and glossy. If it sits for more than 10 minutes, it will thicken as it cools; stir in a little warm milk or extra brine to loosen it back up. The cheese amount can be scaled up or down using the ratio above.
