Mutton Indian Gravy Recipe

Ingredients
  

  • 2 lbs mutton, bone-in pieces
  • 1 cup plain yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp ground coriander
  • 1 tsp red chili powder
  • 1 tsp garam masala, plus extra for finishing
  • Salt, to taste
  • 3 tbsp oil or ghee
  • 2 medium onions, thinly sliced
  • 2 large tomatoes, finely chopped
  • 1 bay leaf
  • 1 cinnamon stick (2-inch)
  • 4 green cardamom pods
  • 4 whole cloves
  • 1 tsp cumin seeds
  • Chopped fresh cilantro, for garnish
  • Water, as needed

Method
 

  1. Marinate mutton with yogurt, ginger-garlic paste, turmeric, coriander, chili powder, garam masala, and salt. Refrigerate at least 30 minutes.
  2. Heat oil or ghee in a heavy pot. Bloom cumin seeds and whole spices for 30 seconds, then add onions and cook until deep golden, 8 to 10 minutes.
  3. Add tomatoes, cook 5 minutes until mushy. Add marinated mutton, sear briefly, then pour in 1 cup water. Bring to a boil, lower heat, cover, and simmer 45 to 60 minutes until mutton is tender, adding water if needed.
  4. Stir in extra garam masala and simmer uncovered 2 minutes. Garnish with cilantro and serve hot.

Notes

Let the curry rest off the heat for 10 minutes before serving. The gravy thickens slightly and the flavors settle. Marinate the mutton overnight if you can for even more tender meat.
