Mushroom Ravioli Sauce Recipe

Ingredients
  

  • 3 tbsp unsalted butter
  • 8 oz cremini mushrooms, sliced
  • 1 medium shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 3/4 cup heavy cream
  • 1/3 cup finely grated Parmesan cheese
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • Salt and black pepper
  • A small pinch of nutmeg (optional)

Method
 

  1. In a large skillet over medium-high heat, melt 2 tbsp butter. Add mushrooms, salt, and pepper. Cook undisturbed 4 minutes, then stir and cook 4 minutes more until golden.
  2. Add remaining 1 tbsp butter, shallot, garlic, and thyme. Cook 2 minutes until shallot softens.
  3. Pour in wine, scrape up browned bits, and simmer 1 to 2 minutes until nearly evaporated.
  4. Stir in cream, bring to a gentle simmer, and cook 3 to 4 minutes until slightly thickened.
  5. Remove from heat, stir in Parmesan until melted, and adjust seasoning. Toss with hot cooked ravioli and serve immediately.

Notes

This sauce is meant to be tossed with 1 lb of your favorite mushroom ravioli (or any filled pasta). The nutrition information is for the sauce alone. Use the starchy pasta water to loosen the sauce if needed—the starch helps it cling beautifully.
