Mushroom Miso Soup Recipe

Ingredients
  

  • 4 cups dashi broth (or vegetable broth)
  • 8 oz mushrooms (shiitake or cremini), sliced
  • 1/4 cup white miso paste
  • 7 oz firm tofu, cubed
  • 2 scallions, thinly sliced

Method
 

  1. In a pot, bring dashi to a simmer over medium heat. Add mushrooms and cook 5 minutes until tender.
  2. Turn heat to low. Ladle some broth into a bowl, whisk in miso until smooth, then stir back into pot.
  3. Add tofu, warm through 2 minutes without boiling. Taste and adjust salt if needed.
  4. Ladle into bowls, top with scallions, serve immediately.

Notes

If using vegetable broth instead of dashi, a splash of soy sauce can deepen the flavor. For a richer broth, sauté the mushrooms in a little oil first.
