Mushroom Egg Frittata Recipe

Ingredients
  

  • 6 large eggs
  • 4 oz cremini mushrooms, sliced
  • 2 tbsp unsalted butter
  • 1/4 cup shredded cheese (gruyere, cheddar, or Swiss)
  • 1/4 tsp salt, plus more for mushrooms
  • 1/8 tsp black pepper
  • Fresh chives for serving (optional)

Method
 

  1. Preheat broiler with rack 6 inches from heat. Melt butter in an 8-inch oven-safe skillet over medium heat. Add mushrooms and a pinch of salt; cook until golden, about 4 minutes.
  2. Whisk eggs with 1/4 tsp salt, pepper, and half the cheese.
  3. Pour egg mixture into skillet over mushrooms. Reduce heat to medium-low and cook without stirring until edges are set, 2 to 3 minutes.
  4. Sprinkle remaining cheese on top. Broil until puffed and golden, 2 to 3 minutes. Slide onto a plate, scatter chives if using, and slice while hot.

Notes

Let the frittata rest for a minute after it comes out of the broiler so the slices hold together cleanly. If your skillet handle isn’t oven-safe, wrap it tightly in foil.
