Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 4 oz shredded low-moisture mozzarella cheese (about 1 cup)
  • 1 tsp garlic powder, divided
  • 1 tsp dried oregano, divided
  • 1/2 tsp salt, divided
  • 1/4 tsp black pepper, divided
  • 2 tbsp olive oil

Method

  1. Preheat oven to 400°F. Butterfly chicken, pound to ½ inch. Season inside lightly with salt, pepper, and a pinch of garlic powder. Stuff each with ¼ cup mozzarella, fold, and secure with toothpicks.
  2. Mix remaining garlic powder, oregano, salt, and pepper. Pat chicken dry and rub seasoning outside. Heat olive oil in an ovenproof skillet over medium-high. Sear chicken 3–4 minutes per side until golden.
  3. Transfer skillet to oven and bake 12–15 minutes, until internal temp reaches 165°F. Optional: broil 1 minute for extra browning.
  4. Rest 5 minutes, remove toothpicks, slice, and serve with pan juices.

Notes

If your chicken breasts are uneven, pound them to the same thickness so they finish together. The 5-minute rest is not optional; it keeps the meat juicy when you cut in.
